Chewy almond cookies

 


Ingredients

1 1/2 tsp. almond flour
2 egg whites, lightly beaten
3/4 tsp. powdered sugar
1 tsp. vanilla extract
1 tsp. almond extract
1 pinch salt
1/4 tsp. powdered sugar

How to:

Preheat the oven to 180 degrees and line a baking sheet with parchment paper.
Add the icing sugar to a small bowl and set aside.
In another bowl, mix the almond flour with the egg whites, remaining sugar, vanilla and almond extracts until a cookie dough forms - you may need to use your hands.
Take about 1 1/2 tablespoons of the dough and roll it into a ball. Place the ball in the bowl with the icing sugar and transfer to the baking sheet. Repeat for all the dough.
Use your fingers to flatten the cookies slightly.
Bake for 11-13 minutes. Do not overbake!
