Ingredients


500 gr. fava
beans 3 red onions, coarsely chopped
2 cloves garlic, chopped
1 liter hot water
Juice of 2 lemons
1/3 fl. of tea olive oil
Thyme
Salt and freshly ground pepper

How to:


Rinse the fava beans with plenty of water.
Heat 2-3 tablespoons of olive oil in a saucepan, add the chopped onions, garlic and some fresh thyme and sauté.
Once the onions begin to caramelize, add the fava beans and stir. Pour in the hot water and olive oil, reduce the heat to medium and season well with salt and pepper.
Simmer with the lid closed for about 40-50 minutes, until the fava beans become thick like porridge.
When it boils, pour in the lemon juice and transfer the mixture to a food processor. Pulse until the fava beans are smooth and creamy, like purees.
Serve the fava beans with a drizzle of olive oil, a tablespoon of diced onion and some capers or chopped parsley.
