Ingredients
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp unsalted butter, softened
1/4 tsp white granulated sugar
1 tsp vanilla extract
2 tbsp lemon juice
1 tbsp lemon zest
1 large egg at room temperature
For the topping:
2 tsp powdered sugar
3-4 tbsp lemon juice
2 tbsp lemon zest
1/2 tsp vanilla extract, optional
How to:
In a medium bowl, whisk the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, using an electric mixer, beat the butter and sugar until fluffy, about 2 to 3 minutes.
Add the egg, vanilla, lemon juice, and zest and beat well.
Pour the flour mixture into the egg mixture and mix on low to medium speed until you get a mixture with the perfect texture.
Shape the cookies and place them on the baking sheets with parchment paper.
Bake for 10 to 12 minutes. The edges will look done, but the center will still be slightly soft. Remove from the oven and let them cool for 5 minutes.
In a small bowl, mix the ingredients for the glaze and garnish the cookies.
