Fried rice with chicken

 




Ingredients

2 chicken breasts, diced
1 tbsp olive oil
1 tbsp sesame oil
1 green pepper, diced
1 onion, diced
2 cloves garlic, crushed
1/2 tsp peas
1/2 tsp corn
1 tbsp tomato sauce
2 large eggs, beaten
2 tsp cooked, cold rice
4 spring onions, chopped
2 tbsp soy sauce or more to taste
Salt, to taste
Pepper, to taste


How to:

Heat the olive oil in a large frying pan and fry the chicken cubes until cooked through - about 5 minutes. Remove the chicken from the pan and set aside.
Heat the sesame oil in the pan and sauté the onion and pepper until softened - about 5 minutes more. Then add the garlic and cook for another minute, stirring constantly.
Add the peas, corn and sauce and mix well. Cook for another 2-3 minutes.
Push the contents of the pan to the side and pour the beaten eggs into the empty space and cook until scrambled. Mix the egg with the remaining ingredients.
Add the rice, chicken and spring onions and mix well. Cook for a few more minutes, until the rice is heated through.
Pour the soy sauce on top, along with any additional seasonings if desired, and mix again.
